一、个东谈主简历
张春江,男,博士,究诘员,硕士生导师,长久从事肉与肉成品工程化究诘使命,在收用菜肴工业化、食物自热期间领域取得了改进性效用。先后主握国度重心研发贪图课题2项,主握或参与省部级科研课题20余项。发表学术论文85篇;参编辑述4部;授权发明专利66件;制定或参与制定国度轨范、行业轨范、团体轨范10项,获取国度、省部级科技奖项9项。
二、主要究诘领域
长久从事肉类菜肴工程化、食物自热期间究诘使命。主要究诘领域:
1.肉类菜肴工程化:开展肉类菜肴品性发育与保握机理、因素相互作用、数字化调味调质、智能化加工等关节期间究诘,创制预制成型、高效热加工、自动化包装等工程化中枢开拓。
2.食物自热期间:研发食物自热期间,开拓自热食物究诘姿色体系,研制高效、安全、合乎性广的自热期间与安装,制定自热食物系列轨范。
